The reason is history as much as taste. Testaccio grew up around the old slaughterhouse, and the cooking Rome is known for — the offal dishes, the long-cooked sauces — is tied to that working neighbourhood. Its hill, Monte Testaccio, is itself made of broken ancient amphorae, the pottery that once carried oil into the city.

The advice from locals is specific about the hour:

Testaccio is not a secret any more
